Simple & Healthy Energy Bites Recipe
These Healthy Energy Bites are a delicious, no-bake snack packed with oats, nut butter, chia seeds, and a touch of honey for natural sweetness. Perfect for a quick energy boost, they're easy to make, customizable, and great for on-the-go snacking!
Ingredients:
1 cup old-fashioned rolled oats
1/2 cup nut butter (peanut butter, almond butter, or cashew butter)
1/4 cup honey or maple syrup
1/4 cup mini chocolate chips (optional)
2 tablespoons chia seeds or flaxseeds
1/4 cup unsweetened shredded coconut (optional)
1 teaspoon vanilla extract
A pinch of salt
Instructions:
In a medium bowl, combine the rolled oats, chia seeds (or flaxseeds), shredded coconut (if using), and salt.
Add the nut butter, honey (or maple syrup), and vanilla extract to the dry ingredients. Stir until everything is well combined. The mixture should be thick and slightly sticky.
If you'd like, fold in mini chocolate chips or dried fruit for added sweetness and texture.
Use your hands to roll the mixture into bite-sized balls (about 1 inch in diameter).
Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
Once set, transfer the energy bites to an airtight container. They can be stored in the fridge for up to a week.
