🍉 Summer Recipe Watermelon Tomato Basil Salad
Sweet, savory, and perfectly refreshing — this summer salad hits all the right notes and takes just minutes to make!
Ingredients (Serves 2):
1 cup cubed watermelon
1 cup cherry tomatoes, halved
2 tbsp crumbled goat cheese
1–2 tbsp chopped fresh basil
1 tbsp balsamic vinegar (or glaze)
1 tbsp toasted pine nuts or chopped almonds
Pinch of sea salt & cracked black pepper
Instructions:
Combine watermelon and tomatoes in a bowl.
Add fresh basil, sprinkle with goat cheese, and top with nuts.
Drizzle with balsamic and season with salt & pepper.
Serve immediately — or chill it for 10 minutes for a refreshing treat.
Optional twist: Add arugula or spinach for a leafy base.
