🍉 Summer Recipe Watermelon Tomato Basil Salad

Sweet, savory, and perfectly refreshing — this summer salad hits all the right notes and takes just minutes to make!

Ingredients (Serves 2):

  • 1 cup cubed watermelon

  • 1 cup cherry tomatoes, halved

  • 2 tbsp crumbled goat cheese

  • 1–2 tbsp chopped fresh basil

  • 1 tbsp balsamic vinegar (or glaze)

  • 1 tbsp toasted pine nuts or chopped almonds

  • Pinch of sea salt & cracked black pepper

Instructions:

  1. Combine watermelon and tomatoes in a bowl.

  2. Add fresh basil, sprinkle with goat cheese, and top with nuts.

  3. Drizzle with balsamic and season with salt & pepper.

  4. Serve immediately — or chill it for 10 minutes for a refreshing treat.

Optional twist: Add arugula or spinach for a leafy base.
