Ingredients:
1 cup cooked quinoa or brown rice
½ cup canned chickpeas or black beans (rinsed & drained)
½ avocado, sliced
1 cup roasted or steamed veggies (like broccoli, carrots, or bell peppers)
1 boiled egg or 3 oz grilled chicken/tofu
Optional: sprinkle of feta, drizzle of tahini or olive oil, lemon wedge
Instructions:
Layer everything in a bowl.
Warm it up if desired, or enjoy it cold as a fresh, balanced bowl.
Top with your favorite herbs, seeds, or a little hot sauce for extra flavor.
